Stracciatella is a typical fresh dairy product from the regions of Puglia, Basilicata and Molise, mostly known as the soft filling of the famous burrata. It’s made of hand-shredded stretched curd, added with fresh cream. Its texture is soft; its flavor is savory, delicate and sweet. A real treat for the palate.
Stracciatella is excellent alone but also as a sauce for pasta or pizza. Try it in a Bolognese crescentina with a few slices of Parma ham.
