Bovine “copertina” (1kg)


Copertina is a cut obtained from the forepart of the bovine. The meat is very leanand great to cook stews, roasts, boils and gulasch.

It’s called in different ways depending on the city: in Milan is called cappello di prete, whilst in Parma and Verona it’s the palotta di spalla and the fettone di spalla in Mantua.
