Very ancient Tuscanian sheep’s cheese with a recognizable red crust. To serve with broad beans or “sciocco” (silly) bread, the salt-free Tuscanian bread, and a nice glass of Chianti. Rumor has it Caterina De’ Medici was crazy about Marzolino, and we’re sure you will be too.
