Scottona rump is a meat obtained from the muscle in the upper part on the inside of the cow’s thigh. This cut presents a flat shape and it’s very lean, therefore it has a low fat content. It is also a very beefy cut, so it has a hard consistency when used to prepare steaks, while becoming very tender and tasty if cooked as a roast.
